Ingredients

  • 1 large onion
  • 3 large potatoes
  • 1 lb sausage
  • 2 tsp salt
  • ½ tsp pepper
  • 1 tsp dried basil
  • 2 cups of water
  • 1 can creamstyle corn
  • 1 can whole kernel corn
  • 1 can evaporated milk (NOT sweetened evaporated milk!)

Instructions

  1. Chop up the onion and potatoes.
  2. Brown the sausage in a large pot.
  3. Scoop out the sausage leaving some of the fat in the pan.
  4. Saute the onion in the fat until shiny and soft.
  5. Add the sausage, potatoes, salt, pepper, basil, and water to the pot.
  6. Cook on medium-low until the potatoes are soft when you poke them with a fork (15-20 minutes). If you have time, cook them longer than 15 minutes until the potatoes are downright mushy.
  7. Stir in the cans of corn and milk.

Heat on low for as long as possible (at least 20 minutes). Avoid boiling.
