Corn Chowder
Ingredients
- 1 large onion
- 3 large potatoes
- 1 lb sausage
- 2 tsp salt
- ½ tsp pepper
- 1 tsp dried basil
- 2 cups of water
- 1 can creamstyle corn
- 1 can whole kernel corn
- 1 can evaporated milk (NOT sweetened evaporated milk!)
Instructions
- Chop up the onion and potatoes.
- Brown the sausage in a large pot.
- Scoop out the sausage leaving some of the fat in the pan.
- Saute the onion in the fat until shiny and soft.
- Add the sausage, potatoes, salt, pepper, basil, and water to the pot.
- Cook on medium-low until the potatoes are soft when you poke them with a fork (15-20 minutes). If you have time, cook them longer than 15 minutes until the potatoes are downright mushy.
- Stir in the cans of corn and milk.
Heat on low for as long as possible (at least 20 minutes). Avoid boiling.
